Gluten-free and Dairy-free Maca Coconut Flour Pancakes

These pancakes are so quick and simple to make πŸ™‚ I haven’t had pancakes for awhile since being gluten and corn free, thinking they would take awhile to conjure up and only saved as a weekend treat!

But these were so easy to make and I love the subtle coconut flavour from the coconut flour! They also are infused with the superfood maca, which is great for energy – perfect for sleepy mornings!

Gluten-free and Dairy-free Maca Coconut Flour Pancakes

Ingredients:
– 1/4 cup coconut flour
– 1/2 teaspoon cinnamon
– 1/2 teaspoon maca
– pinch of salt
– 1/2 teaspoon baking powder
– 1 teaspoon vanilla
– 2 eggs
– 1 tablespoon honey.
– 1/2 cup coconut milk (or dairy free of choice)
– shredded coconut to sprinkle

Method:

1. Combine all the ingredients in a bowl (minus the shredded coconut for sprinkling). Allow mixture to sit for a few minutes to thicken. Place dollops of mixture on a hot,greased skillet and sprinkle coconut lightly over the pancakes on one side. Fry the mixture for about 1 or 2 minutes each side.
2. Serve πŸ™‚

  1. So I just happened to pick up coconut flour yesterday. I was thinking of trying my hand at a gluten free carrot cake…have you made one yet? Anyway the pancakes look yummy. I’m going to have to try those too.
