Microwave Carrot Cake Oatmeal – vegan, gluten-free, dairy-free, corn-free, refined sugar-free

Microwave Carrot Cake Oatmeal

– ⅓ cup rolled oats (gf if needed)
– 1/2 tablespoon chia seeds
– 1 tablespoon ground flaxseed
– 1/2 tsp ground cinnamon
– ⅛ tsp ground nutmeg
– 1-2 tablespoons pure maple syrup (depending on sweetness preferred)
– ¼ tsp pure vanilla extract
– ½ cup unsweetened milk of choice (I use a blend of coconut-rice, but use almond or dairy if you prefer)
– ½ cup water
– 1 raw shredded carrot, organic if possible
– Sprinkle of raisins (optional)
– Spoonful of coconut yogurt or Greek (opitional)

1. Add your oats, flaxseed, chia seed, spices, maple syrup, vanilla, milk and water to a bowl and stir. Cook in microwave for 2 & 1/2 minutes. Meanwhile grate your carrot. Add your grated carrot to the mixture, stir and cook for an additional 1 & half minutes. Stir in raisins if using and finish with a dollop of your favourite yogurt!
