Vegan, Iron-Rich Superfood Prune Balls
Ingredients:
1 cup sunflower seeds
1/2 cup pepitas
1 cup prunes, pitted
1/4 cup dried cranberries/raisins (i use a combo of both!)
3 heaped dessert spoons of raw cacao powder
1.5 teaspoon spirulina
1 teaspoon baobab powder
1 teaspoon maca powder
1 teaspoon lucuma powder
1 tbsp raw honey
1 teaspoon organic or homemade vanilla essence
1 teaspoon cinnamon
1 tablespoon coconut oil
OPTIONAL: Sesame Seeds to roll in.
Method: Process all the ingredients until smooth, about 1-2 minutes on high. If the mixture seems to dry you can add extra 2-3 prunes or drizzle a bit of coconut oil too. Roll the mixture into bowls and roll into sesame seeds. Store in the fridge and have when you want a tasty, nutritional hit!
