Raw, Vegan Chocolate Caramel and Hazelnut Slice – Refined Sugar-free, Gluten-Free, Corn-free, Dairy-Free

Raw, Vegan Chocolate Caramel and Hazelnut Slice – Refined Sugar-free, Gluten-Free, Corn-free, Dairy-Free

Ingredients:
Base:
– 2/3 cup hazelnut meal
– 1/3 cup coconut flour
– 2 tablespoons coconut oil
– 2 tablespoons pure maple syrup
– 1/2 teaspoon organic vanilla essence

Caramel:
– 15 pitted medjool dates (soaked for 20minutes&drained)
– 1/2 cup cashews
– 1/4 cup pure maple syrup
– 3 tablespoons coconut oil
– 2 tablespoons water (I use 2 tablespoons from the water the dates were soaking in!)
– 1/2 teaspoon organic vanilla essence
– sprinkle of salt
– sprinkling of chopped hazelnuts (for sprinkling on top, do not process)

Topping:
– 3 tablespoons coconut oil
– 2 tablespoons rice malt syrup
– 1/2 tablespoon hazelnut butter (or other nut butter of choice)
– 1 tablespoon cacao

Method:
1. Combine base ingredients in a bowl and press into a lined square pan(I line mine with gladwrap for easy removal!). Place in freezer.
2. Combine caramel ingredients, apart from the chopped hazelnuts, in a food processor until creamy.
3. Smooth the caramel over the base. Sprinkle the crushed hazelnuts on top of the caramel and lightly press them into the caramel. Place in the freezer for 20 minutes.
4. Combine all the chocolate topping ingredients together and spread over the top of the caramel. Place back in freezer to set.
5. Make sure you keep it either in the fridge or freezer 🙂 and enjoy your slice!
