Fudgy Chocolate and Hazelnut Banana Oat Muffins – Gluten-Free, Egg-Free, Flour-Free, Oil-free

Fudgy Chocolate and Hazelnut Banana Oat Muffins
Makes 12.

Ingredients:
– 2 ripe bananas, mashed
– 2 cups oats
– ‘Chia eggs’ (2 tablespoons of chia seeds with 6 tablespoons of water, set aside for 20 minutes). (Or use 2 eggs alternatively)
– 1 teaspoon vanilla paste
– 1 cup Greek yogurt
– 1/2 cup chopped, skinless hazelnuts
– 3/4 cup coconut sugar
– 1/2 cup cacao powder
– 1.5 teaspoon baking powder
– 1/2 teaspoon baking soda
– extra coconut sugar for sprinkling on top (optional)

Method:
1. Preheat oven to 205 degrees Celsius and line 12 muffins holes.
2. In a food processor, process 1 cup of the oats to a fine powder/flour.
3. Add the oat flour to a bowl with the remaining 1 cup of unprocessed oats and all the other ingredients. Mix.
4. Spoon into muffin liners and sprinkle with a little extra coconut sugar on top if you like, cook for 15-20 minutes. Enjoy ūüôā
