Get a proper start to your mornings with this quinoa porridge that is packed with superfoods!
Instead of having your greens in a green smoothie, why not mix it up a bit and have it in your porridge. Kale is a nutritional powerhouse, being an anti-inflammatory food that is high in iron and vitamin k. Not a bad way to start the morning 😉

Superfood Cacao, Maca and Kale Quinoa Porridge
Serves 2.
Ingredients:
- 2 tablespoons shredded coconut.
- 1 tablespoon chia seeds.
- 1 tablespoon flaxseeds.
- 4 kale leaves, destalked.
- 1 cup cooked quinoa.
- 1 cup coconut milk or milk of choice
- 2 teaspoons coconut oil.
- 1 1/2 tablespoon raw cacao powder.
- 1 teaspoon ground cinnamon.
- 1 teaspoon maca powder, optional.
- strawberries and sunflower seeds, to serve.
Method:
1. Process kale in food processor until finely chopped.
3. Place quinoa, coconut milk (or milk of choice), shredded coconut, chia seeds, flaxseeds and kale in a small saucepan and bring to a gentle boil. Reduce heat and add coconut oil, stirring until oil has melted.
4. Add cacao, cinnamon and maca and stir through. Once porridge is thick remove from heat and transfer to a bowl. Sprinkle with sunflower seeds and serve with strawberries.
