In the cold weather, I always find a warm porridge to be the perfect solution!
Except sometimes if I don’t feel like having the typical oat porridge (although I do love them!) I like to mix it up with quinoa grain.
The dish is really satisfying as a breakfast! The banana adds a sweetness so you don’t need to add sugar – but can do if you have a sweeter tooth! The addition of the chia seeds also plump the dish out, making it appear volumious and never-ending…:D
Of course, you can’t go wrong with a dollop of natural yogurt and some fresh blueberries and raspberries on top! Now this is just setting the day up to be good…
Quinoa Banana, Berry, Chia Breakfast Bowl
Serves 1 generously.
- 1/4 cup of dry quinoa
- 1 tablespoon chia seed
- 1 cup water (or half water/half milk)
- 1 banana, half mashed, half roughly chopped
- 1/4 teaspoon cinnamon
- Sprinkling of blueberries
- Sprinkling of raspberries
- generous dollop of natural yogurt
Rinse quinoa under cold water and drain. Bring water to the boil in a saucepan and add quinoa and chia seed. Cook for about 15 minutes, until grains are fluffy and the mixture has gotten quite voluminous. If needed, add in more water or milk to your preference. Stir in half the mashed banana and the cinnammon. Stir in the chopped banana pieces. Transfer to a bowl and top with fresh blueberries, raspberries and natural yogurt!
