Green Smoothie

I would never dream of adding spinach to a smoothie, but was motivated to try a recipe after reading Oh She Glow’s blog post about green monsters (the name she calls the spinach drink! – can be found here)

I’ve adapted her recipe a bit to taste, but I was motivated by the idea which she presented – a green power drink! I was so surprised by the taste, these smoothies, though green as a monster, taste delicious, smooth and creamy. Please don’t let the idea of spinach as a smoothie turn you off – they are yummy, I promise!

If you would like something more sustainable, then I would suggest adding 2 scoops of protein isolate.

Maybe Popeye was onto something after all 😉

Green Smoothie Recipe

Serves 1.

Ingredients:

  • 3 Tablespoons of Organic Yoghurt
  • 1/4 cup of milk
  • 1 teaspoon of coconut oil
  • 1 tablespoon of my LSP (Ground Linseed Sunflower and Pecan mix, recipe here)
  • 1 teaspoon chia seeds
  • 2 handfuls of baby spinach leaves
  • 1 banana
  • Ice

Method

Place the milk, yoghurt, coconut oil, LSP and chia seeds in the blender. Then add the spinach leaves, topped with the banana. (Add the banana last to hold down the spinach leaves so they don’t go everywhere!). Once nice and smooth, add in ice and blend until the ice is incorporated. Pour into a glass and enjoy.
